The card with flour in its creases
Three eggs, a cup of flour and a handwritten recipe card that has been used so often it is mostly thumbprint.
How it goes
- Bring the eggs to room temperature before anything else.
- Measure the flour into the black cup and level it with a knife.
- Read the card once, all the way through, before starting.
The card is in someone else’s handwriting and has a small drawing in one corner that nobody can explain. It stays in the drawer because copying it out would lose the thumbprints.
Nothing on it is precise. “A good oven” and “until it looks right” are instructions that only work after the tenth time.
